Fig Butter Breakfast Sandwich



There's nothing better than starting the day with a super healthy egg sandwich. It's unique and tasty flavors are perfect for those in search of something new to try.
Here's what you'll need:

~ one plain English muffin
~ a red onion
~ fresh spring greens or spinach
~ fig butter
~ pepper
~ salt
~ butter
~ 1-2 eggs

Start by slicing your red onions. 
Place them in an omelette pan with your butter and cook until they begin to lose the crisp.
Remove from your pan and fry up 1 to 2 eggs over easy. Pop your muffins in the toaster.
Putting fig butter only on one side, start to stack your sandwich:
egg, salt & pepper, salad, red onions, & last, your fig butter coated top.
Flavors of sweet & spice blend with creamy egg & salad.
