Irish Soda Bread
Hoping everyone had a delightful St. Patrick's Day!
To celebrate the Irish holiday, we made some delicious soda bread.
Here's the list:
1 cup buttermilk
1 stick and 1/2 butter
1 cup raisins
4 cups flour
1/4 sugar
1 tablespoon of baking powder
1 teaspoon of baking soda
pinch of salt
1 egg
1 teaspoon of grated lemon or orange peel
Melt the 1/2 stick of butter and soak your raisins. Once plumped, combine all your ingredients saving the buttermilk for the end. Form your dough into a small round loaf. Corningware makes for a perfect size.
Bake at 350 until golden brown.
Eat it while it's still warm with butter and honey! I promise you'll love this:)
For a touch of interest:
Add a dash of cinnamon to your melted butter and raisins.
Also a teaspoon of vanilla wouldn't hurt either, just sayin':)
