Yummy Red Skin Potatoes & Peppers


 
~A different take on garlic rosemary red skin potatoes~
So... how delicious is a dish when the leftovers are just as tasty as your first bite?
I know there are a million and one ways to make potatoes, but lets face it. If they're not baked, fried, or mashed, we all kinda run out of ideas.
This dish is so delicious, you'll want to make extra just so you have some the next day.
 
Start by boiling 6-7 red skin potatoes, unpeeled
Pull them out of the water while they are solid, but cooked through
you don't want mashed potatoes,
cut them up into cubes and add:
sweet onions, red & yellow peppers, and 2 tablespoons of cut up butter
 
 
 
Combine it all together. Drizzle evoo and sprinkle, garlic powder, salt, rosemary and parsley.
 Roast your potatoes in the oven until golden brown on 350.
 
 
 
These make a great side dish to any meal.
And...
You can enjoy them the next morning or for an early lunch...
re-roasted with eggs over easy served right on top!
