Baba's Quick Sponge Cake

Here is a super quick and tasty sponge cake to serve with your tea or coffee. We just love it and you will too! It's perfect for fast desserts or for those 'just because' days.


You'll need:

10 eggs at room temperature
10 Tbs of sugar
10 Tbs of flour
1 Tbs of baking powder
1 lemon (grated)

On the highest speed, mix your 10 eggs until light and fluffy. In a separate bowl, add your grated lemon, flour, and baking powder all together.


Add the sugar 1 tablespoon at a time. 

Continue mixing, as the batter should rise slightly more.

Then REDUCE the speed on your mixer to the lowest setting. Add your flour mixture, again, 1 tablespoon at a time.



I used a rectangular cake pan with a removal bottom. I sprayed the sides and lined the bottom with parchment paper.


Tap the pan slightly on the bottom or sides to relieve and eliminate any bubbles. You'll see them start to rise.

Warm your oven up to 350 and right before you place your cake inside, reduce the heat to 325.




Bake for 20 mins. Remove from the pan and let it cool completely before cutting. That's it!
Top with fresh berries for a guilt free dessert:)
