A twist on a vintage recipe


Have you ever gone to a health foods store and tried some of their granola cookies with nuts & seeds  and thought, "geez... I wonder how they make this soooooooo good???"

Well, I'm about to share a huge secret with you!


One of my favorite things to do is take vintage recipes and revamp them a bit.
Take this delicious Oatmeal Cookies recipe... straight from the 50's!

Oatmeal Cookies

1 cup shortening
1 cup brown sugar
1/2 cup white sugar
1 egg
 2 1/2 cups of oatmeal
1 1/2 cups of sifted flour
1/4 tsp salt
1 tsp baking soda
1 tsp vanilla 
3/4 cups of raisins

Cream shortening with the sugars and 1 egg.
Add vanilla extract.
Sift the flour, salt, and soda all together in a separate bowl. 
Add the raisins to the dry ingredients and mix.
Add the dry ingredients with the shortening mixture until well blended. 
Drop teaspoonfuls of the dough onto a greased baking sheet. Cook for 10-12 minutes at 375.

But....... here's what I did.
I swapped the oatmeal for the lovely Muesli!

Muesli is a healthy packed breakfast cereal that can be eaten cold or hot.
It has nuts, seeds, wheat, rolled oats, and dried fruits.

Plus.... I used parchment paper instead of greasing a baking sheet.
It makes removing the cookies so much easier!







When you are blending your ingredients together, you will notice that the dough is thick.
Trust me when I say it's okay!
These came out so delicious!!!












These are such a hit with family! Perfectly crunchy on the outside with a soft, chewy center. The salty pumpkin seeds mixing with the sweetness is mouthwatering. 
It's a great addition to add to your back to school snacks!
