Another Yummy Breakfast

Breakfast.... the most important meal of the day. Why not make it a good one? Next time your in the mood for a delightful morning dish, give this one a try.



* pita bread
* bacon, cut up in 1 inch pieces
* leeks, washed thoroughly and cut up
* chives
* 2-3 eggs per pita (yes, we love eggs!)
* feta cheese
* tomatoes

Start off by warming some pita bread in your toaster oven. ( We're using pita bread because the shape is sure to catch the yummy, runny eggs.) Stove top, fry up your inch size cut bacon. When it has let out a little fat, flip them, and add your cut up leeks. Saute for a few minutes on a low to med flame. Remove your bacon and leeks onto a paper towel to suck up the juices our bodies don't appreciate:) In the same pan, fry up 2-3 eggs, over easy. Salt to a minimum due to the bacon. Add some cut up chives at the end for a bigger flavor boost. For a side to your quick, breakfast meal, try some tomatoes & feta cheese. They make for the perfect addition.
