Mud Pie

Has it really been this long since the last post?  Yikes!  Well, we are finally getting back into a 'routine' and figured what better way to sweeten things than with a post about mud pie! I made it the other day and wanted to share how easy this recipe is.


You'll need:
2 boxes of chocolate teddy grahams, crushed. (The food processor is great & fast for crushing.)
1 package of cream cheese
1/2 stick unsalted butter
1 cup powdered sugar
3 1/2 cups of whole milk (reduced for the instant pudding)
2  boxes of instant vanilla pudding (3.4 oz each)
1 container of cool whip

In a mixer, whip up the cream cheese, butter, & powdered sugar, until cream cheese has no lumps. It works better if you let it get to room temperature before you use it.  In a separate bowl, prepare the instant pudding. Use 3 1/2 cups of milk instead of the 4 that the two packages require. Combine the cream cheese mixture to the vanilla pudding. When they have blended together, add the cool whip as well. Begin to layer by starting with the ground teddy grahams. You can add a third layer by using crushed oreos. Just make sure your pudding mixture is between. 
It's a perfect, light and yummy dessert!
